Q&A: Is there a great pizza recipe in the house?

Question by koketah: Is there a great pizza recipe in the house?
Alright, I’m not looking for any family secrets here but look — Every time I make pizza dough from these home style cook books, it’s NOTHING like the stuff I made years ago, in an Italian restaurant I worked. What am I missing? I want that dough to be fairly heavy, and it’s got to be elastic, and yet spread and basically hold it’s shape when I’m done. These book things give you this spongy stuff that springs right back to the size of a bottle cap after you fumble with it for a minute or two. There’s flour, yeast, water, olive oil maybe…I just want the stuff that’s going to be what it should be….Amen if you can help me. Thanks.

    It’s almost Memorial Day weekend–try pizza on the grill!

    Pizzas cook very quickly on the grill, so before you begin grilling them, be sure to have all the equipment and ingredients you need at hand. Equipment includes a pizza peel (or a rimless baking sheet), a pair of tongs, a paring knife, a large cutting board, and a pastry brush; ingredients include all the toppings and a small bowl of flour for dusting. Timing and coordination are crucial; if you are unsure of your skill level, try cooking the first two pizzas one at a time, then work up to cooking the final two in tandem. The pizzas are best served hot off the grill but can be kept warm for 20 to 30 minutes on a wire rack in a 200-degree oven. Hardwood charcoal and charcoal briquettes work equally well. Whichever you use, it is important that the coals be spread in an even layer over three-quarters of the grill bottom; coals placed any higher will scorch the crust.
    Makes four 9-inch pizzas

    Dough:

    2 tablespoons extra-virgin olive oil
    1 cup water (8 ounces), room temperature
    2 cups bread flour (11 ounces), plus more for work surface
    1 tablespoon whole wheat flour (optional)
    2 teaspoons sugar
    1 1/4 teaspoons table salt
    1 teaspoon instant yeast

    Topping:

    1 1/2 pounds medium plum tomatoes (5 to 6), cored, seeded, and cut into 1/2-inch dice
    3/4 teaspoon table salt
    6 ounces fontina cheese , shredded (about 2 cups)
    1 1/2 ounces Parmesan cheese , finely grated (about 3/4 cup)
    1 recipe Spicy Garlic Oil (see associated recipe)
    1/2 cup chopped fresh basil
    Coarse salt

    Garlic Chicken Pizza:

    4 ounces light cream cheese, softened
    1/4 cup nonfat sour cream
    2 cloves garlic, mashed
    1 cup cooked chickens, diced
    1/2 cup red onions, cut in rings
    1/2 tomato, chopped
    1/2 cup mushrooms, sliced
    1 cup mozzarella cheese, part skim milk,shredded
    1 pizza dough
    3 tablespoons parmesan cheese

    1. Preheat oven to 350 degrees.
    2. Mix together the cream cheese, sour cream and mashed garlic until smooth.
    3. Spread on the pizza crust.
    4. Top with the chicken, onion, tomato, mushrooms and cheese.
    5. Bake for 15 minutes or until the crust is done and the cheese is melted.
    6. Top with parmesan cheese.

    Here is my pizza recipe link list…I like the looks of the pics on the Tim’s Pizza site..and want to try the Pizza Hut copycat recipes and they say to use bread flour or typo OO Italian flour with distilled water and roma tomatoes..see the encycopizza site for techniques and the Italian typo “OO” site. The pizza grilling video is cool to watch.

    1/4 cup warm water (about 110 degrees)
    1 envelope active dry yeast
    1 teaspoon sugar
    4 cups bread flour
    1/2 teaspoon salt
    1 1/4 cups cold water
    1 tablespoon olive oil
    Yellow cornmeal, for sprinkling the baking sheet

    In a bowl, combine warm water, yeast, and sugar. Stir to combine. In the food processor, combine flour and salt and pulse. Add the yeast mixture, cold water, and oil. Pulse until a ball is formed: this will happen quickly, be careful not to overwork the dough. Scrape dough out onto a lightly floured counter and knead for several minutes until dough is smooth. Allow dough to rest for 2 to 3 minutes. Place dough in oiled bowl and allow to rise at room temperature for about 1 hour.
    Punch dough down, divide into 2 to 4 balls, let rise another 30 minutes.

    Heat up pizza stone in a 500 degree F oven. Form a 10 to14-inch pizza crust and place on a piece of parchment paper sprinkled with yellow cornmeal. Place topping on the crust and place the pizza, with the parchment paper in the oven on the pizza stone or on hot inverted cookie sheet (not aluminum). Bake until golden, about 10 minutes.
