Question by Belinda : any one know of easy dinner recipes with roast chicken in them?
I have bought just a normal roast chicken for sandwiches and didn’t end up eating it. Does any one know of a simple dinner recipe to use this chicken in? Maybe something with vegetables, just nothing too exotic/ spicy and using things that every one has in their household.

   I found eating chicken mixed with mashed potato’s n’ gravy is surprising tasty.

   But to each his own.

   Chicken Fettuccini Recipe

   Barbecued/roast chicken meat, roughly chopped
   2 tablespoons oil,
   1 onion, chopped
   2 cloves garlic, crushed
   100g chopped bacon (optional, but delicious)
   1½ cups chicken stock
   1 cup cream (or just milk, but the sauce will be thinner)
   1 egg yolk, lightly beaten
   fettuccine (or other pasta if desired)

   Cook pasta according to packet directions. Drain.
   Heat oil in frying pan and sauté onion and garlic until soft. Add bacon and cook until bacon is soft.
   Add chicken stock and stir. Simmer for 2 – 3 minutes.
   Reduce heat and add cream.
   Add chicken meat. Add egg yolk and quickly stir through mix to combine.
   Add cooked pasta and gently fold through chicken mixture. Serve.

   Cook some rice and add spinach chicken and some of the juice from cooking the chicken mix it together it looks really pretty and tates great.
