Question by Avery: Need help making a gluten free flour combination using sorghum, amaranth, teff, and chickpea flour.?
Hey gluten sensitive or adventurous dietitians out there. I have looked and looked and decided these flours would be nutritionally suitable for someone wanting gluten free flours with maximal nutritional benefits and reasonable blood sugar effects but cannot find ANY recommendations for blending them. If anyone has any experience mixing just these flours (sorghum, amaranth, teff, and chickpea) I am interested in hearing ratio recommendations suitable for breads and cakes. I am also using almond and coconut flour but have plenty of resources off paleo web sites. Thanks!

I don’t cook with any of these because I prefer to stick to coconut, almond, hazelnut, arrowroot and tapioca, psyllium, flax and chia, cream of tartar, sweet potatoes, chestnuts, buckwheat, quinoa etc… but if you were to google these other flours you mentioned you’d come across many sites with recipes…
