I can’t do the raw fish thing, but I want to think about making sushi myself at home. How long does it last in the fridge? Can I take some to work for lunch or is it a day-to-day thing? How do I store it so it will last? Help!

Buy a sushi cookbook for beginners. ‘Sushi’ does not mean raw fish, that is ‘sashimi.’ Sushi refers to the rice, it contains a bit of vinegar and sugar.
A lot of sushi has cooked food in it, either cooked meat or even veggies. One of my favorites is a crunchy shrimp roll. It has fried shrimp in it.
You can get egg sushi, avocado sushi, carrot and asparagus sushi, etc. Calfornia roll has no raw fish, it is cooked crab (really surimi, fake crab, but delicious).
Sushi takes time to master and you need some good kitchen accessories like the bamboo mat to roll it in, a really sharp knife, a good rice steamer, etc. You also need to get the nori (the seaweed wrapper), or some sesame paste wrappers. You are limited only by your imagination.
But, the book will be so helpful. Get one with step by step instructions and colored illustrations.
