Thai tea leaves were so hard to find. Our Chinatown Montreal had only one store that carried them (to my surprise and delight it was the variety of green tea) and they told me to put it in a coffee filter. Well, I did and it worked very well when I had my measurements correct. So I made Thai tea base without cinnamon, cardamom and clove-two rounded teaspoons tea for each cup of water in the coffee maker. Then I added two teaspoons of sugar for every cup of tea, pretty sweet for my taste, and relaxed. When it was time to serve poured over ice and half ‘n half on top of that. This exactly the same tea I was served in Thai recipes and I tried to reproduce for some time. Really delicious and unique. The color is gorgeous – the orange color of the tea garnished with creamy half n half makes a striking statement in a clear glass. Note: Only Thai tea leaves produce unique color and taste.
