Question by Yo.: Making a romantic Valentine’s dinner for two?
This Valentine’s Day, my boyfriend and I can’t really celebrate it because we have interviews on that day but at different times. I was really hoping to be able to cook him a nice meal, with dessert and maybe an appetizer, for our lovely night together.
Only thing is we live in a dorm so the cooking supplies are slightly limited. So I need a meal that is simple to make and isn’t that much. I am a poor college kid, after all.

Just as a background to cooking, I’m pretty decent so I can try a lot of different things, I just have to keep it in these limits. I have a kitchen with a stove, oven, and a sink. I have some pots and pans and could probably get some smaller appliances from home and bring them back.

stuffed chicken breasts with cream sauce and a veggie on the side.
— CHICKEN ROYALE
4 sm. boneless chicken breasts
1/4 c. flour
1/2 tsp. salt, if desired
1/4 tsp. paprika
Pepper
–STUFFING:–
4 c. soft bread crumbs
2 tbsp. onion
1/2 tsp. salt
1/8 tsp. thyme
Pepper
4 tbsp. melted butter
1/2 c. water
Mix all stuffing ingredients together. Stuff each breast and secure with picks, skewers or thread. Put flour, salt, paprika and pepper in paper or plastic bag. Shake each piece of chicken to coat. Slather breasts with melted butter. Bake at 325 degrees for 1 to 1 1/2 hours, turning once. Sprinkle with parsley. Serve with sauce…
(way to cheat- get a box of stove top stuffing and use that to fill breasts)
VEGGIE-
i’d pick up a couple handfulls of fresh green beans and steam them… add a little butter and herbs or mrs dash and serve…
SAUCE-
3 tbsp. butter
8 oz. mushrooms, sliced
3 med. garlic cloves, minced
1/2 tsp. dried rosemary, crumbled
Freshly ground pepper
1/2 c. whipping cream
Salt
4 oz. dried linguine
2 oz. Bel Paese cheese, cut into small cubes (can substitute Feta cheese)
Chopped fresh parsley
Melt butter in heavy large skillet over medium low heat. Add mushrooms, garlic, rosemary and generous amount of pepper. Cook until mushrooms exude their juices, stirring occasionally, about 5 minutes. Add cream and simmer until sauce thickens slightly, about 3 minutes. Season with salt. (if you don’t like that cheese ask someone at the store for substitution suggestions)
