So, I’m stuck at home because of snow. I have all the basic ingredients, but I’ve looked online and saw all the dessert recipes that call for things like Jello pudding and Bisquick and buttermilk that I don’t have. So I need a quick recipe for cake or brownies… but not cookies. Thank you!!

The trick to any brownie is to not over-bake them. Test doneness with a toothpick, inserted NOT in the middle of the cooked base, but two inches from the edge. The toothpick should be moist with some color or crumbs attached. If the base is baked until a toothpick inserted in the middle comes out clean, you will be guaranteed over-done brownies.

Ingredients
1 stick unsalted butter
1 cup sugar
2 whole eggs
1 teaspoon pure vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon instant espresso powder, optional
1 1/2 cups chocolate chips

Method
Preheat oven to 350°

Grease and flour an 8 x 8 inch pan.

In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, baking powder and espresso powder. Fold in the chocolate chips. Spread batter into prepared pan.

Bake 25 minutes and test for doneness. Do not bake for more than 27 minutes. Remove from oven to a wire rack to cool completely. For neater brownies, cut the base with a plastic knife.
