Question by Me: I really need some help developing a menu for Christmas dinner?
I want to do a mexican-based dinner for Christmas this year and really need some help with the menu, including at least one desert. I would like to make chicken mole, but am at a loss at ideas for other dishes. I appreciate any help, thanks!

I would sugges flan or pupusas for dessert. You could still make stuffing and use chorizo in the stuffing http://www.foodnetwork.com/recipes/food-network-kitchens/roasted-quail-with-brioche-and-chorizo-stuffing-recipe2/index.html.
Make a black bean salad
3 C. canned black beans (drained)
3 C. assorted bell peppers (diced)
5 T. red onion (diced)
3 T. jalapeño
3 T. garlic (minced)
1 T. cilantro (chopped)
3 T. Lime Cilantro Vinaigrette (recipe follows)
Mix all ingredients and allow to marry
Lime Cilantro Vinaigrette
1/2 C. lime juice
1/2 t. honey
1/4 C. cilantro (chopped)
1 t. salt
1/2 t. ground black pepper
3/4 C. peanut oil
3/4 C. vegetable oil
Mix all ingredients except oils. Allow flavors to blend for 5-6 minutes. Gradually whish in the oils. (from Culinary Instititue of America cookbook).
These should get you started.
