Question by Mick: I need some brainstorming help for a cake?
Alright I decided to make a cake for my step mum’s birthday, easy right? Nope she’s lactose intolerant, unable to process gluten, allergic to alcohol, doesn’t eat animal byproduct, and is on a sugar free diet. Now I myself am a career prep cook for a five star innovative restaurant but I don’t bake cakes, well anyway.
So far I have rice flour, pea flour, and corn flour for natural sweetness. I have dried figs and carrot which I’m breaking down for sweetness, and soy milk. I’m thinking I’ll use baking powder. I want a big fluffy one, i know most gluten free baking is dense, I don’t like that. I’m thinking I could add soda water for raising. But I need help with the measurements and stuff.

Waaaaaaaay too much trouble to go through. What does this woman live on? Geeze. There are gluten free bakeries, contact one. You’d have to be a chemist to come up with something edible.
