Question by Hello!: What gives the chinese chow mein restaurant style flavour?
I’ve tried oyster sauce, soy sauce, sesame oil, mirin (japanese sweet rice wine), white pepper, you name it, but still my chow mein (stir fried noodles) the restaurant flavour. Every single time it tastes like something’s missing.
What can i add to give it that “special flavour”?
No stupid answers like “soy sauce” or google links. I will report every answerer who i don’t feel answers my question.

The noodles are marinated first…in a mixture of oyster sauce and soy sauce. Then the sauce it’s cooked with is usually made with a little broth, more oyster and soy sauce, fresh ginger, garlic and corn starch to help it thicken. I’m not really sure what you’re missing…I’ve heard of some people adding a tiny bit of molasses.
