Good but Easy recipes?

Hi, I’m a 22 year old guy looking to gain a little culinary skill; ( I would be lying if a lady wasn’t involved.) Anyway I’ve never really cooked anything beyond burgers, grilled cheese, soup, meatloaf and eggs (not all at once mind you.)

And while I jestingly no desire to become Canada’s next leading chef, I have realized my skills in the kitchen could use some sharpening. So I am here asking for easy to make recipes – with easy to find I could learn. My biggest thing would be that one tiny slip up could not ruin it. My thanks in advance. I’ve googled for an answer but they are either too complicated or just don’t look appetizing.

First for a meal, start with your sides and work up to your entree.
-Any meat /fish will need a starch and at least 1 veggie. A really good salad with a homemade dressing is really good and women generally like salads.( I hate Iceberg lettuce with some tasteless tomato wedges.)
-One simple salad is Caesar, Its made with just Romaine lettuce, a nice homemade dressing with Parm cheese and garlic croutons.
-Another salad would be an Asian citrus miso type dressing, have baby greens with snow peas and carrots , cut into matchsticks, sliced scallions, sprouts, may be some jicama or pomegranate seeds.
-With a great salad, you can simply add a grilled chop or burger or pan fry Salmon or tuna . Or boil water and toss in a lobster or crab legs, serve with butter.
-Serve with a good crusty bakery bread and a bottle of wine.
– Dessert can be as simple or complex as you like: strawberries,whipped cream with a slice of angel food, or tiramasu,a coffee liquor soaked cake with layers of vanilla custard.

5 ounces fresh shiitake mushrooms
5 ounces fresh portobello mushrooms
5 ounces fresh cremini (or porcini) mushrooms
1 T. ev olive oil
1 stick plus 1 tablespoon unsalted butter, divided
1 c. chopped yellow onion
1 carrot, chopped
1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided
Kosher or sea salt
Freshly ground black pepper
2 c. chopped leeks, white and light green parts (2 leeks)
1/4 c. all-purpose flour
1 c. dry white wine
1 c. half-and-half
1 c. heavy cream
1/2 c. minced fresh flat-leaf parsley
